Grilled Chicken Salad with Cheddar Bay Biscuits
Today I felt like making something lighter than our usual fare. It's been so hot lately that I just didn't feel like using the stove. So, I sauteed a chicken breast with olive oil and washed some spinach and green leaf lettuce. I topped Mike's salad with tomatoes, cheddar cheese, and one carrot (a big step for the veggie-phob!) and green onions. Mine had lots of carrots, and not much else. I felt like going simple. I also made some cheddar bay biscuits on the side.
The verdict
This was a nice, light meal. It was nice to not have to do a lot of planning for a meal. The cheddar bay biscuits paired nicely with the salads. I give this meal 4 stars for taste and 4 stars for health.
